Sriracha Shark (fish)

Spicy, savory and a little wild. Shark has a naturally mild flavor, which makes it a great base for the bold marinade here: teriyaki, sriracha, brown sugar, garlic and vinegar.

Each batch soaks for two full days, and the result is a sweet-and-spicy burn that lingers just long enough. It's high in protein, and House of Jerky sources its shark from regulated fisheries that use the whole fish, with no finning.
